Prepare Sushi Rice
Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold running water until the water runs clear. This removes excess starch.
Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18 minutes. Remove from heat and let it sit, covered, for 10 minutes.
Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow the rice to cool to room temperature.
Assemble the Sushi Donut
Prepare the Salmon
Slice the salmon into thin, bite-sized pieces.
Shape the Rice
Wet your hands to prevent sticking. Take a handful of sushi rice and mold it into a donut shape, creating a hole in the center. Repeat until you have 2-4 rice donuts.
Add Toppings
Spread a layer of crème fraîche over the top of each sushi donut. Arrange the sliced salmon on top, sprinkle with kombu salt, and finish with a dollop of salmon roe.
Serve
Serve the sushi donuts immediately with soy sauce, pickled ginger, and wasabi on the side if desired.
