    Prepare the Potatoes

    Wash the fingerling potatoes and cut them in half lengthwise. In a pot, bring salted water to a boil and add the potatoes. Cook for about 15 minutes until fork-tender. Drain and set aside.

    Cook the Salmon

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the Skuna Bay salmon fillets with salt and black pepper. Place the fillets in the skillet, skin-side down. Cook for about 4-5 minutes on each side or until cooked through. Remove from the skillet and keep warm.

    Sauté the Vegetables

    In the same skillet, add the remaining olive oil. Add minced garlic and sliced bell peppers. Sauté for about 3 minutes until the peppers are tender. Then add the fresh spinach and cook until wilted.

    Make the Lemon Caper Sauce

    In a small bowl, mix the lemon juice and capers. Pour this mixture over the sautéed vegetables and stir to combine.

    Combine and Serve

    Plate the salmon fillets, spoon the sautéed vegetables and lemon caper sauce over the top, and serve with the fingerling potatoes on the side.
