Prepare the Grits
In a medium saucepan, bring 4 cups of water to a boil. Add the corn grits and a pinch of salt. Reduce heat to low and simmer, stirring occasionally, for about 20-25 minutes until thickened. Stir in the Parmesan cheese and mix well. Set aside and keep warm.

Sear the Scallops
Pat the scallops dry with paper towels and season with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Once hot, add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through. Add butter in the last minute to baste the scallops.
