Ingredients for Seared Scallops, Grits, and Pesto

Method

Directions for Seared Scallops, Grits, and Pesto

  1. 1

    Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add the corn grits and a pinch of salt. Reduce heat to low and simmer, stirring occasionally, for about 20-25 minutes until thickened. Stir in the Parmesan cheese and mix well. Set aside and keep warm.

  2. 2

    Make the Pesto

In a food processor, combine fresh basil, pine nuts, garlic, lemon juice, and a pinch of salt. Pulse to combine, then slowly add olive oil until smooth. Adjust seasoning to taste and set aside.

  3. 3

    Sear the Scallops

Pat the scallops dry with paper towels and season with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Once hot, add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through. Add butter in the last minute to baste the scallops.

  4. 4

    Assemble the Dish

To serve, place a generous scoop of grits on each plate, top with 3 seared scallops, and drizzle with the pesto. Garnish with additional basil if desired.
