Prepare the Custard

    Melt the Chocolate

    In a heatproof bowl, melt the dark chocolate over a double boiler until smooth. Set aside to cool slightly.

    Heat Cream and Milk

    In a saucepan, combine heavy cream, whole milk, and granulated sugar. Heat over medium heat until hot but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks, vanilla extract, and a pinch of salt.

    Combine Mixtures

    Slowly pour the hot cream mixture into the egg yolk mixture while whisking continuously to temper the yolks.

    Add Chocolate

    Once combined, whisk in the melted chocolate until smooth and fully incorporated.

    Bake

    Pour the mixture into small ramekins and place them in a baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake at 325°F (163°C) for about 30-35 minutes, or until set but still jiggly in the center.

    Cool

    Remove from the water bath and let cool to room temperature. Refrigerate for at least 4 hours or overnight.

Prepare the Brulee Topping

    Caramelize Sugar

    Sprinkle about 1/2 tablespoon of granulated sugar over the surface of each custard. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy, golden crust. Alternatively, place under the broiler for a few minutes, watching closely to avoid burning.

Prepare the Whipped Cream

    In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

Serve

    Serve the pot de crème chilled, topped with a dollop of whipped cream.
