    Searing the Pork Cheeks

    Heat olive oil in a large pot over medium-high heat. Season the pork cheeks with salt and black pepper. Sear the cheeks in the pot until browned on all sides, about 8-10 minutes. Remove and set aside.

    Sautéing the Vegetables

    In the same pot, add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are soft.

    Deglazing the Pot

    Add the red wine to the pot, scraping the bottom to deglaze and incorporate any browned bits. Bring to a simmer and let it reduce by half.

    Adding the Broth and Herbs

    Pour in the chicken broth, then add the seared pork cheeks back to the pot along with thyme and bay leaves. Bring to a gentle simmer.

    Slow Cooking

    Cover the pot and reduce the heat to low. Cook for about 2-3 hours, or until the pork cheeks are tender and easily pull apart with a fork.
