Preparation of Karaage

    Marinate the Protein

    In a bowl, combine soy sauce, sake, mirin, minced garlic, and grated ginger. Add the chicken or fish and marinate for at least 30 minutes.

    In a separate bowl, mix cornstarch, all-purpose flour, salt, and pepper.

    Coat the Protein

    Remove the protein from the marinade, letting excess liquid drip off. Dredge it in the flour mixture until fully coated.

    Fry the Karaage

    Heat vegetable oil in a deep pan over medium-high heat. Fry the coated pieces in batches until golden brown and crispy, about 4-5 minutes per side. Drain on paper towels.
