Make the Coconut Cake
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Combine Mixtures
Add the dry mixture to the butter mixture alternately with coconut milk. Stir in the shredded coconut and vanilla extract.

Bake the Cake
Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool.

Layer the Cake
Once the cakes are cooled, slice each one in half horizontally. Layer the pastry cream between the layers.

Drizzle with Rum
Drizzle dark rum over the assembled cake layers. Allow to chill in the refrigerator for at least 1 hour before serving.
