    Marinate the Cobia

    In a medium bowl, combine olive oil, minced garlic, lemon juice, sea salt, black pepper, and fresh thyme. Add the cobia fillets and marinate for at least 30 minutes.

    Prepare the Vegetables

    While the fish is marinating, prepare the vegetables by slicing the zucchini and halving the cherry tomatoes. Set aside.

    Cook the Cobia

    Heat a grill or a grill pan over medium-high heat. Once hot, add the marinated cobia fillets and grill for about 4-5 minutes on each side until the fish is opaque and flakes easily with a fork.

    Sauté the Vegetables

    In a separate skillet, heat a tablespoon of olive oil over medium heat. Add the zucchini and sauté for about 3-4 minutes. Then add the cherry tomatoes and cook for another 2-3 minutes until they are softened.

    On a serving plate, place the grilled cobia fillets topped with sautéed vegetables. Garnish with fresh parsley.
