Marinate the Chicken
In a mixing bowl, combine soy sauce, sake, grated ginger, minced garlic, salt, and black pepper. Add the chicken thighs, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Coating
In a shallow dish, mix together cornstarch and all-purpose flour. This will be used to coat the marinated chicken.

Make the Sauce
In a small bowl, whisk together mayonnaise, honey, soy sauce, rice vinegar, and sesame oil until smooth. Set aside.

Heat the Oil
In a deep pan or fryer, heat the oil to 180°C (350°F).

Fry the Chicken
Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, then carefully place in the hot oil. Fry in batches until golden brown and cooked through, about 6-8 minutes per batch.

Drain and Serve
Remove the fried chicken and place on paper towels to drain excess oil. Serve hot drizzled with the Honey-Soy-Mayo Sauce.
