Prepare the Crust
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Bake in a preheated oven at 350°F (175°C) for 10 minutes, then remove and let cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sour cream, remaining granulated sugar, and vanilla extract, mixing until well incorporated. Add the eggs one at a time, mixing on low speed until just combined.

Combine and Bake
Pour the cream cheese mixture over the cooled crust in the springform pan. Bake at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill and Serve
After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight. Before serving, top with your choice of seasonal fruit garnish.
