Prepare Pork Belly
Preheat your oven to 300°F (150°C). In a large oven-proof pot, heat olive oil over medium-high heat. Season the pork belly with salt and pepper. Sear the pork belly on all sides until browned, about 4-5 minutes each side.

Combine Braising Liquid
Pour in chicken broth, soy sauce, brown sugar, and rice vinegar. Bring the mixture to a simmer.

Braise the Pork
Cover the pot with a lid and transfer it to the preheated oven. Braise the pork belly for 2 to 2.5 hours, until tender.

Prepare Sweet Potato/Apple Hash
In a separate skillet, cook diced sweet potatoes in boiling water for about 10 minutes until tender. Drain and set aside. In the same skillet, heat a bit of oil and add sweet potatoes and diced apples. Sauté until caramelized, about 5-7 minutes.

Grill Cabbage
While the pork is braising, grill the cabbage wedges on a grill or a grill pan over medium heat for about 3-4 minutes on each side until slightly charred.

Serve
Once the pork belly is done, let it rest for 10 minutes before slicing. Serve slices of pork belly with sweet potato/apple hash and grilled cabbage.
