    Prepare the Steak

    Season the hanger steak with salt and black pepper. Allow it to come to room temperature for about 30 minutes.

    Sear the Steak

    Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for 10 minutes before slicing.

    Make the Red Wine Reduction

    In the same skillet, add the red wine and beef stock. Bring to a boil and reduce the heat to a simmer. Cook until the sauce is reduced by half, about 10-15 minutes.

    Whisk in butter and fresh thyme until melted and combined. Season with salt and pepper to taste.
