Cooking Pasta

Boil the Pasta
In a large pot, bring water to a boil. Add a generous pinch of salt.

Cook the Cavatappi
Add the cavatappi pasta to the boiling water and cook according to package instructions, usually about 8-10 minutes, until al dente.

Drain the Pasta
Once cooked, drain the pasta and set aside.
Making Cheese Sauce

Melt the Butter
In a large saucepan over medium heat, melt the unsalted butter.

Add Flour
Once melted, whisk in the all-purpose flour and cook for about 1-2 minutes until golden, creating a roux.

Whisk in Milk
Gradually add the milk while whisking continuously until the mixture is smooth and begins to thicken, about 5-7 minutes.

Add Cheeses
Reduce heat to low and stir in the shredded cheddar, gruyère, and cream cheese until fully melted and combined.
