Preparation of Pork

Marinate the Pork
In a large bowl, combine garlic powder, onion powder, cumin, salt, and black pepper. Rub the spice mixture over the pork shoulder and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Baguette
While the pork is resting, cut the baguettes in half lengthwise and toast them lightly on a grill or in an oven until they are golden brown.

Assemble the Sandwich
Spread Dijon mustard on both sides of the toasted baguette. Layer shredded smoked pork, ham, salami, pickles, and Swiss cheese inside the baguette.

Serve
Slice the Cubano diagonally and serve immediately with extra Dijon mustard and pickles on the side.
