Cucumber-Mint Simple Syrup

    Prepare the Syrup

    In a small saucepan, combine the sliced cucumber, fresh mint leaves, granulated sugar, and water.

    Simmer

    Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar has completely dissolved.

    Infuse Flavors

    Once the sugar is dissolved, reduce the heat to low and let it simmer for about 10 minutes to allow the flavors to infuse.

    Strain the Syrup

    Remove from heat and strain the syrup through a fine-mesh sieve into a bowl or jar, discarding the solids. Let the syrup cool to room temperature.

Matcha Mocktail Assembly

    Mix the Matcha

    In a small bowl, whisk together the matcha powder and a few tablespoons of sparkling water until smooth and no lumps remain.

    Combine Ingredients

    In a large glass or cocktail shaker, combine the cucumber-mint simple syrup (about 3-4 tablespoons), lime juice, and the matcha mixture.

    Slowly pour in the remaining sparkling water and gently stir to combine.

    Fill a glass with ice cubes, pour the matcha mocktail mixture over the ice, and garnish with additional mint leaves or cucumber slices if desired.
