Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heat the Oil
In a large deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried fries to the hot oil in batches, frying until they are golden brown and crispy, about 5-7 minutes per batch. Remove fries and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle them with salt and drizzle with truffle oil. Toss to coat evenly.

Garnish and Serve
Transfer the fries to a serving platter, garnish with chopped parsley, and serve immediately.
