Gelato Preparation

    Prepare the Base

    In a saucepan, combine whole milk, heavy cream, and sugar. Heat the mixture over medium heat until the sugar dissolves, but do not let it boil.

    Whisk the Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale. Slowly add a small amount of the warm milk mixture to the yolks to temper them, whisking constantly. Then, pour the yolk mixture back into the saucepan with the milk and cream.

    Cook the Mixture

    Continue to cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat.

    Flavor the Gelato

    Divide the base into three separate bowls. In the first bowl, add dark chocolate until melted; in the second, stir in brewed Kona coffee; and in the third, mix in vanilla extract and a pinch of salt.

    Chill and Freeze

    Allow the mixtures to cool to room temperature, then refrigerate for at least 2 hours. Once chilled, churn each mixture in an ice cream maker according to the manufacturer’s instructions, then transfer to a container and freeze for about 4 hours before serving.
