Cooking the Beef Tenderloin

    Season and Sear

    Season the beef tenderloin with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the tenderloin for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove and let it rest.

Making the Green Peppercorn Sauce

    Prepare the Sauce

    In the same skillet, reduce the heat to medium and add butter. Sauté shallots until translucent. Add green peppercorns, beef broth, and cognac. Simmer for 5 minutes. Stir in heavy cream and simmer for another 2-3 minutes. Season with salt to taste.

Cooking the Vegetable Medley

    Sauté the Vegetables

    In a separate pan, heat olive oil over medium heat. Add zucchini, bell peppers, and carrots. Sauté for about 5-7 minutes until tender. Season with salt and black pepper to taste.

Making the Mashed Potatoes

    Prepare the Mashed Potatoes

    Boil potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, and mash until smooth. Season with salt and black pepper to taste.

Serving

    Plate and Serve

    Slice the beef tenderloin and place it on a plate. Spoon the green peppercorn sauce over the beef. Serve with the sautéed vegetable medley and a generous scoop of mashed potatoes.
