1. Roast the Beets

Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes, or until they are tender when pierced with a fork. Allow to cool, then peel and slice.

2. Caramelize the Walnuts

In a skillet over medium heat, add the walnuts. Toast for 2-3 minutes until fragrant. Add honey and stir continuously until the walnuts are coated and caramelized, about 5-7 minutes. Remove from heat and let cool.

In a large bowl, place the spring mix. Top with sliced roasted beets, sprinkle with bleu cheese, and add the caramelized walnuts.

4. Dress the Salad

In a small bowl, whisk together the walnut oil, balsamic vinegar, salt, and black pepper. Drizzle the dressing over the salad, toss gently, and serve.
