Cooking the Beef Tenderloin

Preparing the Gorgonzola Sauce

Make the Sauce
In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Pour in heavy cream and bring to a simmer. Stir in gorgonzola cheese until melted and smooth. Season with salt and pepper to taste.

Making the Mashed Potatoes

Prepare the Potatoes
Boil potatoes in salted water until tender. Drain and return to pot. Add butter and heavy cream, mashing until smooth. Season with salt and pepper to taste.
Plating

Serve the Dish
Slice the rested beef tenderloin and place it on a plate. Drizzle with gorgonzola sauce, add a scoop of sautéed vegetables, and serve with a side of mashed potatoes.
