    Prepare the Duck

    Preheat the oven to 375°F (190°C). Pat the duck dry with paper towels. Rub the salt, pepper, and olive oil all over the duck.

    Roast the Duck

    Place the duck breast side up on a roasting rack in a roasting pan. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C).

    Prepare the Berry Wine Sauce

    In a saucepan, combine the mixed berries, red wine, honey, and thyme. Bring to a simmer over medium heat and cook for about 10-15 minutes until the sauce thickens slightly. Stir in butter until melted and well combined.

    Make the Mashed Potatoes

    While the duck is roasting, peel and chop the potatoes. Boil in salted water until tender, about 15 minutes. Drain and mash with milk and minced garlic until smooth. Season with salt and pepper to taste.

    Prepare the Vegetable Medley

    In a skillet, heat a little olive oil over medium heat. Add the mixed vegetables and sauté for about 5-7 minutes until tender. Season with salt, pepper, and thyme.

    Serve

    Once the duck is done, let it rest for 10 minutes before carving. Serve the duck with berry wine sauce drizzled on top, alongside mashed potatoes and vegetable medley.
