Prepare Fish Cakes

    Combine Ingredients

    In a large mixing bowl, combine the cooked salmon, bread crumbs, egg, mayonnaise, Dijon mustard, Worcestershire sauce, green onions, Old Bay seasoning, salt, and black pepper. Mix until all ingredients are well incorporated.

    Form Patties

    Using your hands, form the mixture into patties, about 3 inches in diameter and 1 inch thick. Place the patties on a baking sheet lined with parchment paper.

    Bake

    Preheat the oven to 375°F (190°C). Bake the salmon cakes for 20-25 minutes, or until golden brown and cooked through, flipping halfway through.

Make Spicy Aioli

    Mix Ingredients

    In a small bowl, combine mayonnaise, sriracha sauce, lemon juice, and minced garlic. Whisk until smooth and well combined. Adjust seasoning with salt if needed.

Prepare Salad Garnish

    Combine Salad Ingredients

    In a separate bowl, mix arugula, pickled red onions, shaved fennel, and halved cherry tomatoes.

    Dress Salad

    Drizzle olive oil and lemon juice over the salad mixture. Season with salt and black pepper to taste. Toss gently to combine.

Serve

    Plating

    On a plate, place a generous handful of the salad mixture. Top with a baked salmon cake and drizzle with spicy aioli. Serve immediately.
