Prepare the Heirloom Tomatoes
Wash the heirloom tomatoes thoroughly under cold water. Slice them into wedges or thick slices, depending on your preference, and place them in a large mixing bowl.

Cube the Watermelon
Cut the watermelon in half and scoop out the flesh with a melon baller or cut into cubes. Measure out 2 cups of watermelon and set aside.

Slice the Fresh Mozzarella
Drain the fresh mozzarella from its liquid and slice it into rounds or cubes, as desired.
Herbed Olive Oil Preparation

Make Herbed Olive Oil
In a blender or food processor, combine the extra virgin olive oil, fresh basil leaves, fresh thyme leaves, garlic cloves, salt, and black pepper. Blend until smooth and well combined.

Strain (Optional)
If desired, strain the herbed olive oil through a fine mesh sieve to remove the solid bits for a smoother texture.
Assembly

In a serving dish, layer the heirloom tomato wedges, watermelon cubes, and fresh mozzarella slices. Drizzle the herbed olive oil generously over the top.
