For the Roasted Garlic Aioli

Method

For the Buttermilk Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, salt, black pepper, cayenne pepper, garlic powder, onion powder, and paprika. Add the chicken pieces and ensure they are fully submerged in the buttermilk mixture. Cover and refrigerate for at least 4 hours, preferably overnight.

  2. 2

    Prepare for Frying

In a separate bowl, mix the all-purpose flour with paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

  3. 3

    Coat the Chicken

Remove the chicken from the buttermilk and allow excess to drip off. Dredge each piece in the seasoned flour mixture until fully coated. Shake off any excess flour.

  4. 4

    Fry the Chicken

Carefully place the coated chicken pieces in the hot oil. Fry for about 10-15 minutes or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Remove and place on a wire rack to drain excess oil.

For the Coleslaw

  1. 5

    Prepare the Vegetables

In a large bowl, combine the shredded cabbage and grated carrots.

  2. 6

    Make the Dressing

In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

  3. 7

    Combine and Chill

Pour the dressing over the cabbage and carrots. Mix until everything is well coated. Cover and refrigerate for at least 30 minutes before serving.

For the Hot Honey

  1. 8

    Combine Ingredients

In a small saucepan over low heat, combine the honey and red pepper flakes. Stir occasionally until warm and well mixed. Remove from heat and let cool slightly before serving.

For the Roasted Garlic Aioli

  1. 9

    Roast the Garlic

Preheat the oven to 400°F (200°C). Cut the tops off the garlic bulbs and drizzle with olive oil. Wrap in foil and roast for about 30-35 minutes or until soft and caramelized. Allow to cool slightly, then squeeze the garlic out of the skins into a bowl.

  2. 10

    Mix the Aioli

In a bowl, combine the roasted garlic, mayonnaise, lemon juice, and salt. Mix until smooth and well combined.

Serving the Dish

  1. 11

    Plate the Meal

Serve the buttermilk fried chicken hot with a side of coleslaw, kosher dill pickles, hot honey drizzled on top, and roasted garlic aioli for dipping.
