Prepare the Garlic
Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and drizzle with a little olive oil. Roast in the oven for about 30 minutes or until the cloves are soft.

Prepare the Kale
Wash the Tuscan kale thoroughly and remove the thick stems. Tear the leaves into bite-sized pieces and place them in a large bowl.

Make the Vinaigrette
Once the garlic is cool, squeeze the roasted cloves into a bowl. Add olive oil, red wine vinegar, salt, and black pepper. Whisk until well combined.

Combine and Serve
Add the vinaigrette to the kale and toss well to coat. Slice the red onion thinly and add to the kale. Top with toasted pine nuts and grated Parmesan cheese before serving.
