Prepare the Salmon
Preheat your oven to 400°F (200°C). Season the salmon fillets with salt and black pepper. Place them on a baking sheet and bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
Prepare the Salad
In a large salad bowl, combine the mixed salad greens, roasted red peppers (sliced), and crumbled goat cheese.
Assemble the Salad
Once the salmon is cooked, let it cool slightly, then break it into large chunks and add it to the salad bowl. Sprinkle the toasted pine nuts on top.
Dress the Salad
Drizzle the balsamic vinaigrette over the salad and toss gently to combine all ingredients.
