Prepare the Salmon

Preheat your oven to 400°F (200°C). Season the salmon fillets with salt and black pepper. Place them on a baking sheet and bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.

Toast the Pine Nuts

In a small pan over medium heat, toast the pine nuts for about 3-5 minutes until they are golden and fragrant. Stir occasionally to prevent burning.

Prepare the Salad

In a large salad bowl, combine the mixed salad greens, roasted red peppers (sliced), and crumbled goat cheese.
