    Prepare the Filet Mignon

    Preheat the oven to 400°F (200°C). Season the filet mignon with salt and black pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the filet for 3-4 minutes on each side until browned.

    Roast the Filet

    Transfer the skillet to the preheated oven and roast for 6-8 minutes for medium-rare. Remove from the oven and let it rest for 5 minutes before slicing.

    Make Whipped Potatoes

    While the filet is roasting, boil the potatoes in salted water until tender (about 15 minutes). Drain and return to the pot. Add butter and heavy cream, then mash until smooth and creamy. Season with salt to taste.

    Blanch the Green Beans

    In a separate pot, bring water to a boil. Add green beans and blanch for 3-4 minutes until bright green. Drain and set aside.

    Prepare the Zinfandel Demi-Glace

    In a saucepan, sauté shallots in a bit of olive oil until translucent. Add zinfandel wine and beef stock. Bring to a boil, then reduce to a simmer until reduced by half. Stir in fresh thyme and season with salt and pepper.

    Plate the Dish

    On a plate, add a generous scoop of whipped potatoes, place the sliced filet mignon on top, and arrange green beans on the side. Drizzle with zinfandel demi-glace before serving.
