Prepare the Bread Pudding
Preheat your oven to 350°F (175°C). In a large bowl, combine the milk, cream, sugar, eggs, vanilla extract, cinnamon, and salt. Whisk until well blended.

Combine Ingredients
Add the cubed day-old bread and dried fruits to the mixture. Gently fold to incorporate, ensuring the bread is evenly coated.

Pour the mixture into a greased baking dish and bake for 35-40 minutes, or until the top is golden brown and the pudding is set in the center.

Prepare Bourbon Caramel Sauce
In a saucepan, combine 1 cup of granulated sugar with 1/4 cup of water over medium heat. Stir until the sugar dissolves, then allow it to boil without stirring until it turns a deep amber color. Remove from heat and carefully whisk in 1/2 cup of heavy cream and 1/4 cup of bourbon. Let it cool slightly.

Spoon warm bread pudding into bowls, drizzle with bourbon caramel sauce, and serve with a scoop of vanilla ice cream and almond brittle on the side.
