For the Rock Shrimp Cigars
Preparing Rock Shrimp Cigars
1. Sauté Leeks
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add leeks and sauté until soft and translucent, about 5 minutes. Season with salt and pepper.
2. Cook Rock Shrimp
Add rock shrimp to the skillet with the leeks. Cook until shrimp are pink and opaque, about 3-4 minutes. Remove from heat and let it cool slightly.
3. Prepare Filling
In a mixing bowl, combine the sautéed leeks and rock shrimp with mascarpone cheese. Mix until well incorporated.
4. Assemble Cigars
Lay out a sheet of phyllo dough and brush lightly with olive oil. Place 2 tablespoons of the shrimp filling at one end of the dough and fold the sides over the filling. Roll tightly to form a cigar shape. Repeat with remaining dough and filling.
5. Bake
Preheat oven to 375°F (190°C). Place the cigars on a baking sheet lined with parchment paper. Brush the tops with remaining olive oil and bake for 15-20 minutes or until golden brown.
6. Serve
Remove from oven and let cool slightly. Serve warm with a side of mango mostarda and julienned daikon radish.
