Prepare the Ricotta
In a large pot, combine the whole milk, heavy cream, and salt. Heat over medium heat until the mixture reaches 190°F (88°C), stirring occasionally.

Curdle the Milk
Once the mixture reaches the desired temperature, remove it from heat and add the white vinegar. Stir gently for a few seconds, then let it sit undisturbed for about 10 minutes.

Strain the Ricotta
After resting, line a sieve with cheesecloth and place it over a bowl. Carefully pour the curdled mixture into the sieve to drain the whey. Let it drain for about 15-30 minutes, depending on how creamy or firm you want your ricotta.

Serve
Transfer the fresh ricotta to a serving bowl, drizzle with olive oil, and serve with marinated olives and slices of focaccia.
