Preparation and Cooking

    Make the Fresh Pasta

    On a clean surface, mound the flour and make a well in the center. Crack the eggs into the well and gradually mix the flour into the eggs using a fork until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll the Dough

    After resting, divide the dough into quarters. Roll out each piece using a pasta machine or a rolling pin until thin. Cut into fettuccini strips. Dust with flour to prevent sticking.

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the fresh fettuccini and cook for 2-3 minutes until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Alfredo Sauce

    In a saucepan over medium heat, combine the heavy cream, salt, and black pepper. Bring to a simmer, then reduce heat. Gradually whisk in the Parmesan cheese until melted and smooth.

    Combine Pasta and Sauce

    Add the cooked fettuccini to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

    Garnish with chopped fresh parsley and additional Parmesan cheese if desired. Serve immediately.
