    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form a crust.

    Bake the crust

    Bake the crust in the preheated oven for about 10 minutes, then remove and let cool while preparing the filling.

    Make the filling

    In a large mixing bowl, beat the cream cheese until smooth. Add in the granulated sugar, sour cream, and vanilla extract. Mix until fully combined. Add the eggs one at a time, mixing well after each addition.

    Assemble the cheesecake

    Pour the cream cheese mixture over the cooled crust in the springform pan, spreading it evenly.

    Bake the cheesecake

    Bake in the oven at 325°F (160°C) for about 55-60 minutes, or until the center is set and slightly jiggly.

    Cool and chill

    Once baked, turn off the oven and crack the door open. Let the cheesecake cool in the oven for about 1 hour. Then remove from the oven and refrigerate for at least 4 hours, or overnight.

    Before serving, top the cheesecake with your choice of seasonal fruit. Slice and enjoy!
