Asparagus

Method

Steak Preparation

  1. 1

    Season and Cook the Steak

Season the flat iron steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Add the steak and cook for 4-5 minutes per side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Pomme Frites Preparation

  1. 2

    Prepare Pomme Frites

Peel and cut the russet potatoes into thin strips. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 4-5 minutes. Remove and drain on paper towels. Season with salt.

Asparagus Preparation

  1. 3

    Cook the Asparagus

Trim the ends of the asparagus and toss with olive oil and salt. Grill or sauté over medium heat for about 5-7 minutes until tender but still crisp.

Maitre d’ Butter Preparation

  1. 4

    Make Maitre d’ Butter

In a bowl, combine softened unsalted butter, minced garlic, chopped parsley, and lemon juice. Mix until well combined. Roll into a log shape using parchment paper and refrigerate until firm.

Serving

  1. 5

    Plate the Dish

Slice the steak against the grain and serve with a generous dollop of maitre d’ butter on top. Serve alongside crispy pomme frites and grilled asparagus.
