    Prepare the Mussels

    Rinse the green lip mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Cook Aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic, chopped shallots, and fennel. Sauté for about 5 minutes until the vegetables are soft and fragrant.

    Add Beer and Mussels

    Pour in the wheat beer, bringing the mixture to a simmer. Add the cleaned mussels and cover the pot. Cook for 5-7 minutes, or until the mussels have opened.

    Finish with Cream

    Once the mussels are cooked, stir in the heavy cream and chopped parsley. Season with salt and black pepper to taste. Allow to simmer for another 2 minutes.

    Serve

    Serve the mussels hot in bowls, drizzled with the broth, and enjoy with freshly made pomme frites on the side.
