Baja Tacos Ingredients

Method

Baja Tacos Directions

  1. 1

    Prepare the Salsa

In a bowl, combine black beans, corn, diced red onion, chopped cilantro, lime juice, and salt. Mix well and set aside.

  2. 2

    Season the Swordfish

Rub swordfish fillets with olive oil, Cajun seasoning, garlic powder, salt, and pepper.

  3. 3

    Cook the Swordfish

Heat a skillet over medium-high heat. Add the seasoned swordfish and cook for about 4-5 minutes on each side, or until cooked through and blackened. Remove from heat and let rest.

  4. 4

    Prepare the Fresno Crema

In a small bowl, mix sour cream with diced Fresno chilies to taste. Adjust seasoning if necessary.

  5. 5

    Assemble the Tacos

Warm the flour tortillas in a skillet or microwave. Flake the cooked swordfish and place it on the tortillas. Top with black bean and corn salsa, and drizzle with Fresno crema.

  6. 6

    Serve

Serve the tacos immediately, garnished with extra cilantro if desired.
