    Prepare the Vegetables

    Preheat the oven to 400°F (200°C). Chop the zucchini, yellow squash, and butternut squash into bite-sized pieces. Slice the mushrooms. Spread the vegetables on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 20-25 minutes, until tender and slightly caramelized.

    Cook the Ziti

    While the vegetables are roasting, bring a large pot of salted water to a boil. Add the ziti pasta and cook according to package instructions until al dente. Drain and set aside.

    Make the Tomato Concassé Sauce

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped ripe tomatoes, salt, pepper, and fresh basil. Simmer for about 10 minutes until the sauce thickens slightly.

    Combine and Serve

    In a large bowl, combine the cooked ziti, roasted vegetables, and tomato concassé sauce. Toss to coat evenly. Plate the ziti and top with shaved Parmesan cheese and fried basil. Optionally, add your choice of protein (fried/grilled chicken or grilled shrimp) on top.
