Make the Beer Batter
In a bowl, mix the all-purpose flour, cornstarch, salt, and pepper. Gradually whisk in the beer until the batter is smooth.

Fry the Potatoes
Heat oil in a deep fryer or large pot to 350°F (175°C). Dip the fries in the beer batter and fry in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Layer the crispy fries on a serving plate. Sprinkle melted cheddar cheese over the fries, followed by cooked bacon pieces, and chopped green onions.
