    Prepare the Ingredients

    Thinly slice the ribeye beef and season it with salt and pepper. Slice the white onion into rings.

    Cook the Onions

    In a skillet over medium heat, add a little oil and sauté the sliced onions until they are caramelized, about 5-7 minutes. Remove from skillet and set aside.

    Sear the Ribeye

    In the same skillet, increase the heat to high and add the seasoned ribeye beef. Sear for about 2-3 minutes, stirring occasionally, until the beef is browned and cooked through.

    Assemble the Sandwich

    On each roll, spread a generous amount of horseradish aioli. Layer the seared ribeye, grilled onions, and top with a slice of provolone cheese.

    Melt the Cheese

    Place the assembled sandwiches on a baking sheet and broil in the oven for 1-2 minutes until the cheese is melted and bubbly.

    Serve the sandwiches hot with au jus on the side for dipping and accompany with beer-battered French fries.
