Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9-inch springform pan.

Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes until golden. Remove from oven and set aside to cool.

Prepare the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar, sour cream, and vanilla extract, mixing until well combined. Add eggs one at a time, mixing gently after each addition.

Assemble the Cheesecake
Pour half of the cheesecake mixture over the cooled crust. Place the chocolate-covered strawberries evenly on top, then pour the remaining cheesecake mixture over the strawberries.

Bake the Cheesecake
Bake the cheesecake in the oven at 325°F (160°C) for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight. Release the springform pan and slice to serve.
