Crispy fries layered with slow roasted beef short rib and our house-made rich beef gravy. On top we melt classic cheese curds with the perfect squeak. A Quebec legend!

Preparation and Assembly

    Prepare the Short Ribs

    In the same skillet, add chopped onion and minced garlic, cooking until softened. Add the seared short ribs back into the skillet, along with Worcestershire sauce and beef broth. Cover and place in the oven, cooking for 3 hours until tender.

    Make the Gravy

    Once the short ribs are done, remove them from the pot and shred the meat, discarding any bones. Strain the remaining liquid into a saucepan. In a separate pan, melt butter and whisk in flour, cooking for 2-3 minutes until golden. Gradually add the strained liquid while whisking continuously until thickened. Season to taste with salt and pepper.

    Prepare the Fries

    While the short ribs are cooking, peel the potatoes and cut them into fries. Rinse in cold water and pat dry. In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy. Drain on paper towels and season with salt.

    Assemble the Poutine

    Layer crispy fries on a plate, top with shredded short rib meat, and pour the rich gravy over the top. Finish with a generous amount of cheese curds, allowing them to melt slightly from the heat of the gravy. Serve immediately.
