Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and set aside.

Make the Batter
In a bowl, mix the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.

Coat the Chicken
In another bowl, whisk together the eggs and buttermilk. Dip each chicken piece into the egg mixture, then coat it in the flour mixture. Ensure each piece is fully covered.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the battered chicken pieces to the hot oil in batches. Fry until golden brown and cooked through, about 4-5 minutes per batch. Remove and drain on paper towels.

Cook the Fries
While the chicken is frying, prepare the frozen French fries according to package instructions.

Plate the fried chicken gibs alongside the French fries and serve hot.
