Our Brisket Quesadillas are made with shredded beef brisket, and melted cheddar jack. Served with house made fire roasted salsa and sour cream.

Prepare the Quesadilla
Heat a skillet over medium heat and add 1 tablespoon of olive oil.

Assemble the Quesadilla
Place a tortilla in the skillet and sprinkle half of the cheddar jack cheese evenly over the tortilla. Add 1 cup of shredded beef brisket on top of the cheese and then sprinkle the remaining cheese over the brisket. Top with another tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes until the bottom tortilla is golden brown. Carefully flip the quesadilla and add the remaining tablespoon of olive oil to the skillet. Cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.

Serve
Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges. Serve with house-made fire roasted salsa and sour cream.
