Make the Pudding
In a medium saucepan, whisk together the cornstarch, granulated sugar, and a pinch of salt. Add the milk and cook over medium heat, stirring constantly until thickened (about 5-7 minutes). Remove from heat and whisk in the egg yolks and vanilla extract until smooth. Set aside to cool slightly.

Assemble the Pudding
In a large bowl, slice 3 ripe bananas and layer them at the bottom. Pour half of the pudding mixture over the bananas, then add a layer of vanilla wafers. Repeat with the remaining bananas and pudding.

Chill
Cover the pudding with plastic wrap and refrigerate for at least 2 hours to set.

Prepare Banana Brulee
Slice the remaining banana and sprinkle with brown sugar. In a skillet, melt the butter over medium heat and add the banana slices. Cook until caramelized and golden brown on both sides. Remove from heat and let cool.

Serve
Once the pudding has set, top with the caramelized banana slices and serve with extra vanilla wafers on the side.
