Make Root Beer Concentrate

Dissolve sugars
In a large saucepan, combine 2 cups water, 1 cup granulated sugar, and 0.5 cup light brown sugar. Bring to a gentle simmer and stir until sugars are completely dissolved.

Add flavorings
Stir in 2 tablespoons sassafras bark, 2 tablespoons sarsaparilla root, and 1 teaspoon orange zest (if using). Simmer gently for 15 minutes to extract flavors.

Add spices
Add 1 tablespoon anise seeds, 1 teaspoon ground cinnamon, 0.25 teaspoon ground cloves, and 0.5 teaspoon ground allspice. Continue to simmer for 5–10 minutes.

Finish concentrate
Remove from heat. Stir in 2 teaspoons vanilla extract and 1 teaspoon wintergreen extract. Let the mixture steep off the heat for 10 minutes.

Strain through a fine-mesh sieve or cheesecloth into a clean container. Allow the concentrate to cool completely before serving.

To serve, mix 1 part root beer concentrate with 4 parts cold carbonated water in a pitcher. Adjust to taste.
