1. Prepare poaching liquid
In a wide, heavy-bottomed saucepan, combine red wine, water, granulated sugar, cinnamon stick, star anise, lemon zest, lemon juice, and vanilla extract. Bring to a gentle simmer over medium heat, stirring to dissolve sugar.
2. Prepare pears
Peel the pears, leaving the stems intact for an upright presentation. If desired, core the bottom 1/2 inch to create a cavity for even poaching, then stand pears upright in the liquid.
3. Poach pears
Gently slide the pears into the simmering poaching liquid. Maintain a gentle simmer and rotate the pears occasionally to ensure even color. Poach until tender when pierced with a knife, about 20–25 minutes depending on ripeness.
4. Reduce poaching liquid
Remove pears with a slotted spoon and set aside. Increase heat and simmer the poaching liquid until reduced to a glossy syrup, about 10–15 minutes. Remove cinnamon stick and star anise. If you like, whisk in a small squeeze of lemon juice for brightness.
5. Serve
Plate a pear per person. Spoon warm wine syrup over each pear and top with a scoop of vanilla ice cream (or serve with a dollop of whipped cream) for contrast.
