Make Ambrosia Sauce
In a medium bowl, whisk together mayonnaise (0.5 cup), sour cream (0.25 cup), honey (2 tbsp), Dijon mustard (1 tsp), fresh lemon juice (1 tbsp), sweet pickle relish (2 tbsp), garlic powder (0.25 tsp), salt (0.5 tsp), and black pepper (0.25 tsp) until smooth. Set aside to meld flavors.
Prepare beef patties
Place ground beef in a bowl. Gently divide into 4 equal portions and form into patties about 3/4 inch thick. Lightly season both sides with a pinch of salt and pepper.
Cook patties and melt cheese
Heat olive oil in a large skillet over medium-high heat. Cook patties 3–4 minutes per side for medium, flipping once. In the last minute of cooking, top each patty with a cheddar slice to melt.
Assemble Ambrosiaburgers
Spread Ambrosia Sauce on the bottom half of each toasted roll. Layer lettuce leaves and a tomato slice on each bottom half. Place a cheese-melted patty on top, add any extra sauce, and crown with the top half of the roll.
Serve
Serve immediately while hot. Best enjoyed with classic fries or a light salad.
