1. Prepare the pears
Peel the pears, remove cores, and halve them lengthwise. Set aside.
2. Make the poaching syrup
In a wide saucepan, combine red wine, granulated sugar, fresh lemon juice, orange zest, cinnamon sticks, whole cloves, and vanilla extract. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
3. Poach the pears
Gently add the pear halves to the simmering liquid. Poach until tender and easily pierced with a knife, about 20–25 minutes. If using brandy, stir it in during the last 5 minutes of poaching.
4. Reduce to a glaze
Carefully remove the pears with a slotted spoon and set them aside. Increase heat to medium-high and simmer the poaching liquid until it thickens to a glossy syrup, about 10–15 minutes.
5. Glaze the pears
Return the pears to the pan and turn them in the reduced syrup so they are coated and glossy, about 3–5 minutes.
6. Serve
Serve the pears warm or at room temperature with a spoonful of the syrup, a few fresh raspberries, and a scoop of vanilla ice cream or mascarpone. Drizzle any extra syrup over the top.
