    Make the crust

    In a large bowl, whisk together all-purpose flour, granulated sugar (crust), and fine sea salt (crust). Add cold unsalted butter, cutting it in with a pastry blender or two knives until the mixture resembles coarse crumbs with pea-sized pieces. Drizzle 4-5 tablespoons ice water, mixing with a fork until the dough just comes together. Divide into two equal disks, wrap in plastic, and chill for at least 60 minutes.

    Prepare the pie pan

    Preheat oven to 375°F (190°C). Roll one disk of dough on a lightly floured surface into a circle larger than a deep-dish pie pan. Transfer to the pan, pressing into corners and sides. Trim overhang and chill the lined pan while you prepare the filling.

    Prepare apple filling

    Peel, core, and slice Granny Smith apples. In a large bowl, toss apples with granulated sugar (filling) 0.75 cup, light brown sugar 0.25 cup, all-purpose flour (filling, thickener) 2 tablespoons, ground cinnamon 1 tsp, ground nutmeg 0.25 tsp, salt (filling) 0.25 tsp, and lemon juice 2 tablespoons. Let macerate 15 minutes, stirring occasionally.

    Assemble filling in crust

    Spread the apple filling evenly into the crust-lined pan. Dot with the small pieces of unsalted butter (filling) 2 tablespoons over the filling.

    Top crust

    Roll the second disk of dough into a circle large enough to cover the pie. Place over the filling, trim excess, and crimp edges to seal. Cut a few slits in the top to vent steam.

    Egg wash

    Whisk the large egg with 1 tablespoon water. Brush the top crust with the egg wash for a golden finish.

    Bake the pie in the preheated oven at 375°F (190°C) for 60-75 minutes, or until the crust is deeply golden and the filling is bubbling. If the edges brown too quickly, tent with foil or cover with a pie shield.
