Arrange cheeses
On a large serving board, fan the Manchego slices in one corner and place the Mahón slices beside them to form a soft triangular arrangement.

Add chorizo
Tuck mild chorizo slices between the cheeses and along the edge of the board to create a colorful border and to release aromatics.

Olives
Place the mixed olives in small bowls or on the board in small clusters near the cheeses for easy picking.

Quince paste
Position a small ramekin or ceramic dish of Portuguese quince paste near the cheeses for pairing with the cheese slices.

Fruit arrangement
Scatter clusters of fresh seasonal fruit (grapes, figs, pear slices) around the board to add sweetness and color.

Crostini
Toast crostini slices in a preheated 350°F (175°C) oven for about 5 minutes until lightly crisp; let cool slightly before serving.

Seasoning and garnish
Sprinkle sea salt flakes lightly over the crostini and finish with fresh parsley garnish for color.
