Make berry compote
In a small saucepan, combine mixed berries, 2 tbsp granulated sugar for the compote, lemon juice, and 1 tablespoon water. Simmer over medium heat, stirring occasionally, until the berries soften and the sauce thickens, about 8–12 minutes. Remove from heat and keep warm.

Prepare custard batter
In a large shallow dish, whisk together eggs, milk, vanilla extract, ground cinnamon, 2 tbsp granulated sugar, and a pinch of salt until well combined.

Dip brioche slices
Dip each brioche slice into the custard, allowing it to soak briefly on both sides to absorb the mixture without becoming soggy.

Plate and finish
Arrange the French toast on plates. Spoon warm berry compote over or alongside the toast and drizzle with 1/4 cup maple syrup. Sprinkle a touch of additional cinnamon if desired and serve immediately.
